This 5 ingredient ice cream sandwich follows on from my custard cream ice cream sandwiches but this time we’re going for a Jammie dodger to sandwich a deliciously easy raspberry ripple ice cream. The process is the same, starting with my 2 ingredient ice cream and adding a little condensed milk before swirling through raspberry jam. It’s sweet and fruity and the perfect summer bake when you don’t want to turn the oven on.

These Jammie Dodger raspberry ripple ice cream sandwiches are a no-bake, no-churn frozen dessert that makes 15 generous sandwiches from a creamy vanilla custard ice cream base rippled with raspberry jam and sandwiched between Jammie Dodger biscuits (cookies). The ice cream is made by whisking together vanilla custard, double cream (heavy cream) and condensed milk until smooth, pouring it over a layer of Jammie Dodgers lining a 7x11 inch baking tray, dolloping raspberry jam over the top and rippling it through into beautiful swirls before the second layer of biscuits goes on and everything goes into the freezer. The result is sweet, fruity and deeply creamy, a summer frozen dessert that requires no oven, no churner and very little effort, and tastes like the best possible version of a childhood favourite.

Why I Created This Recipe

If you have already made the custard cream ice cream sandwiches, you will know exactly how good this format is, and you will understand why I had to keep going. The Jammie Dodger felt like the natural next step. Where the custard cream sandwich is all about vanilla and cream, this one is fruity, jammy and slightly more vibrant — the raspberry ripple ice cream is the perfect partner for the sweet, buttery biscuit and its iconic jam centre.

The process is exactly the same as the custard cream version, starting with the 2 ingredient ice cream base and adding condensed milk for smoothness and stability. The only addition is the raspberry jam, which is dolloped over the ice cream mixture before freezing and swirled through in gentle ripples. It sets into gorgeous streaks of deep pink jam running through the pale cream ice cream — stunning to look at when you cut into it, and even better to eat.

Why You'll Want to Make This Recipe

No Oven, No Churn, Five Ingredients

This is a genuinely effortless frozen dessert — no baking, no churning, no cooking of any kind. Whisk, ripple, layer, freeze. Five ingredients and around 15 minutes of active time, then the freezer does everything else.

The Raspberry Ripple

The jam ripple is the thing that makes this sandwich exceptional. Dolloped over the ice cream base and swirled through with a knife or a spoon, the raspberry jam sets into gorgeous streaks of deep pink running through the pale cream ice cream — a classic raspberry ripple effect that looks beautiful when the sandwiches are cut and tastes even better than it looks.

This recipe makes 15 generous sandwiches — enough to fill the freezer for the week, share with friends or bring to a summer gathering. They keep well for up to a month wrapped individually in baking paper (parchment paper) or cling film (plastic wrap).

A No-Bake Summer Bake

This is the perfect recipe for when it is too hot to turn the oven on — all the satisfaction of a proper bake with none of the heat. The kitchen stays cool and the results are spectacular.

A Note on the Raspberry Jam Ripple

The raspberry jam ripple is simple to achieve and very forgiving — but a few things are worth knowing to get the best possible result.

Use a good quality seeded raspberry jam with a high fruit content. The seeds add texture to the ripple and tiny bursts of fruitiness in the finished ice cream, and the higher the fruit content the more intensely flavoured the ripple will be. A very sweet, low-fruit jam will taste flat and sugary rather than bright and fruity once frozen — it is worth seeking out a jam where raspberries are the first ingredient on the list.

Dollop the jam in generous spoonfuls across the surface of the ice cream mixture rather than pouring it in one place — distributing it evenly before rippling means the jam runs through the whole sandwich rather than being concentrated in one area. Then use a knife, a skewer or the handle of a spoon to swirl it through in wide, lazy loops. You are not trying to mix it in — you want distinct streaks of jam rather than a uniform pink ice cream. Less swirling is more here; three or four passes through the mixture is usually enough.

The Hot Knife Trick for Jammie Dodgers

Jammie Dodgers are notoriously difficult to cut cleanly — the jam filling is sticky and tends to pull the two biscuit (cookie) halves apart unevenly, taking chunks of biscuit with it rather than separating cleanly along the seam.

The solution is a warm knife. Run your knife under hot water until the blade is warm, then dry it quickly and use a gentle rolling motion along the seam of the biscuit rather than pressing straight down. The warmth of the blade softens the jam filling just enough to allow the biscuit to separate cleanly, and the rolling motion is less likely to crack or crumble the biscuit than a direct downward cut.

It is fiddlier than halving a custard cream, and you will still lose a few to the process — factor this in and accept it gracefully. The end result is worth it.

My Top Tips for the Perfect Jammie Dodger Raspberry Ripple Ice Cream Sandwiches

  • Use a good quality full-fat storebought vanilla custard for the best result — or the homemade vanilla custard from the Small Batch Bakes series for something even richer and more deeply flavoured. Full-fat is essential; reduced-fat versions freeze harder and less creamily.
  • Whisk the custard, cream and condensed milk together until completely smooth before pouring into the tray. Any unincorporated streaks will freeze separately and create an uneven texture in the finished ice cream.
  • Use the hot knife trick for the Jammie Dodgers — see the section above. Be patient, have a few spare biscuits (cookies) to hand, and expect a casualty or two.
  • Line the tray generously with baking paper (parchment paper), with enough overhang on all four sides to lift the slab out cleanly once frozen. This is the most important practical step — trying to cut the sandwiches from the tray without an overhang is very difficult.
  • Lay the first layer of Jammie Dodgers jam-side up and the second layer jam-side down. This means both jam centres face inward towards the ice cream, which maximises the Jammie Dodger flavour in every bite.
  • Distribute the raspberry jam evenly across the surface before rippling. Dollop it in several places rather than one, then swirl gently with a knife or skewer in wide, lazy loops — three or four passes is enough. You want streaks, not a uniform colour.
  • Do not over-ripple. The temptation is to keep swirling, but too much mixing will incorporate the jam fully into the ice cream rather than leaving it in distinct streaks. Stop earlier than you think you need to.
  • Freeze for at least four hours, but overnight is better. A fully frozen slab cuts more cleanly and the flavours have more time to meld.
  • Remove from the freezer 10–15 minutes before cutting and serving. Use a sharp knife and a single downward motion rather than sawing — this gives the cleanest cuts and the most beautiful cross-section of raspberry ripple.
  • Wrap individual sandwiches in baking paper (parchment paper) or cling film (plastic wrap) immediately after cutting if you are not eating them straight away. Work quickly as they will begin to soften at room temperature.

  • 500g vanilla custard – full-fat storebought from the chilled section, or the homemade vanilla custard for an even richer result
  • 250ml double cream (heavy cream) – full-fat; maintaining the 2:1 ratio of custard to cream from the 2 ingredient ice cream base
  • 150g condensed milk – keeps the ice cream smooth, soft and scoopable rather than icy; adds a milky sweetness that complements the raspberry ripple beautifully
  • 150g raspberry jam – seeded, good quality, high fruit content; see the note above on why the jam matters
  • 15 Jammie Dodgers – halved using the hot knife trick; makes 30 halves for 15 sandwiches with a few to spare for casualties

  • 7x11 inch baking tray – the size is important here; it is the right shape and depth for Jammie Dodgers and gives 15 even sandwiches
  • Baking paper (parchment paper) – for lining the tray with overhang on all sides
  • Large mixing bowl – for whisking the ice cream base
  • Balloon whisk – for combining the custard, cream and condensed milk
  • Sharp knife – for halving the Jammie Dodgers and cutting the frozen slab
  • Knife, skewer or spoon handle – for rippling the jam through the ice cream mixture

Storage

Wrap individual sandwiches tightly in baking paper (parchment paper) or cling film (plastic wrap) and store in a sealed container or freezer bag in the freezer for up to one month. For the best flavour and texture, eat within two to three weeks.

Dietary Variations

Gluten-Free

Jammie Dodgers are not gluten-free as standard — check for a gluten-free alternative or substitute with another gluten-free cream-filled biscuit (cookie) of a similar size. Check the labels on your custard and condensed milk too, though both are generally gluten-free.

Different Jams

The raspberry ripple is the classic combination with vanilla ice cream, but this format works beautifully with other jams too. Strawberry jam is an obvious and delicious alternative — particularly good if you have made the strawberry top syrup and have fresh strawberries to hand. Blackcurrant gives a more intensely flavoured, slightly sharper ripple. Mixed berry jam is excellent for something more complex.

Different Biscuits

The Jammie Dodger is the heart of this recipe, but the format works with other jam-filled biscuits too. Bourbon biscuits with a blackcurrant jam ripple would be an outstanding combination. Shortbread rounds sandwiched with a strawberry ripple would be more delicate and equally good.

Use 500g and follow exactly the same method — you may need to make a slightly larger batch than the standard recipe, so scale up proportionally.

Raspberry Ripple Jammie Dodger  Ice Cream Sandwiches

Instructions

  1. Line a 7x11” baking tray with baking parchment.
  2. To make the ice cream whisk the custard, cream and condensed milk until smooth and fully combined.
  3. Cut all of the jammie dodgers in half (the easiest way is to run your knife in hot water until warm then gently roll along the biscuit to separate) and line the bottom of the tray with half of them, with the jam side facing up.
  4. Pour the ice cream mixture over the jammie dodgers, then dollop the raspberry jam over the ice cream and gently ripple it into, creating swirls of jam in the ice cream mixture. Then place the other half of the Jammie dodgers on top, with the jam side facing down.
  5. Freeze for at least 4 hours, or until fully frozen. When you are ready to serve, take the ice cream out of the freezer 10-15 minutes before cutting into 15 sandwiches. Wrap in baking parchment or cling film and serve.

This is perfect, as far as influencer chefs go, I find this book refreshing in what has become a cohort of lauded influencers who really aren't doing much more than the bog standard meals most people make anyway, or making googled recipes and adding their own "flair".
