Strawberry & Feta Salad with Candied Pecans
British strawberry season is such a wonderful time of the year and the sweet fruit is truly something to behold! They’re honestly perfect on their own but I also love adding them to a salad and this strawberry and feta salad with candied pecans, feta and avocado is as good (and as simple) as it gets. A candied nut is surefire way to my heart, because I do believe all salads need both sweetness and crunch as well as the savoury elements. For creaminess we’ve got avocado, the British strawberries bring fresh summer sweetness, rocket adds a peppery bite, feta brings brine and salinity and it’s all finished off with a dijon mustard vinaigrette. Truly so so simple but oh so good.
This strawberry and feta salad is a fresh, vibrant summer salad that serves two as a main or four as a side — peppery rocket (arugula), creamy sliced avocado, sweet halved British strawberries and crumbled feta, finished with homemade candied pecans and a sharp, mustardy Dijon vinaigrette. It is as simple as a salad gets and as good as a salad gets, which are two things that do not always go together. The candied pecans add the sweetness and crunch that every great salad needs; the feta brings brine and salinity; the avocado gives creaminess; the strawberries bring fresh summer sweetness; and the rocket (arugula) adds a peppery bite that ties everything together. The whole thing takes around 15 minutes to put together and tastes like the best possible use of British strawberry season.
Why I Created This Recipe
British strawberry season is one of the genuine highlights of the food calendar for me, and I feel very strongly that the best thing you can do with a perfectly ripe British strawberry is largely leave it alone. They are honestly perfect on their own. But I also love adding them to a salad, and this strawberry and feta salad with candied pecans and avocado is, in my opinion, as good and as simple as that idea gets.
The candied pecans are a non-negotiable for me — a salad needs sweetness and crunch as much as it needs savoury elements, and a candied nut delivers both in one go. The Dijon mustard vinaigrette is sharp and punchy enough to cut through the richness of the avocado and the saltiness of the feta without overwhelming the delicate flavour of the strawberries. Everything here is doing a specific job, and every element earns its place.

British Strawberry Season
British strawberry season runs from late May through to early September, with June and July marking the peak — the point at which the berries are at their sweetest, most fragrant and most deeply flavoured. Thanks to the widespread use of polytunnels by British growers, the season has extended dramatically over the past few decades — what was once a six-week window is now closer to six months, meaning British-grown strawberries are available for much more of the summer than they used to be.
For this salad, peak season British strawberries are not just recommended — they are the point. Their natural sweetness is what makes the combination with salty feta and sharp vinaigrette work so beautifully. If British strawberries are not yet in season, this is a recipe worth waiting for.

The Candied Pecans
A candied nut is the quickest route to a genuinely special salad — and these take around five minutes to make in a single pan. The combination of toasted nut and caramelised sugar gives a crunch and a sweetness that no plain roasted nut can replicate, and once you start adding candied nuts to salads you will find it very difficult to stop.
Ready in 15 Minutes
The candied pecans take five minutes; the salad assembly takes five minutes; the vinaigrette takes two minutes. This is a 15-minute salad that tastes like considerably more thought and effort went into it — exactly what a summer recipe should be.

A Note on Candied Pecans
Candying nuts is one of the most useful techniques in the salad-maker's repertoire, and it is considerably simpler than it sounds. The principle is straightforward: nuts and sugar go into a dry pan together over a medium-high heat, and the sugar melts and caramelises around the nuts as the heat builds, coating them in a thin, glossy, deeply flavoured caramel that sets to a satisfying crunch as it cools.
A few things are worth knowing before you start. First, the process happens quite quickly once the sugar begins to melt — have your baking paper (parchment paper) ready and stay close to the pan. Second, swirl rather than stir. Stirring with a spoon can cause the sugar to crystallise — swirling the pan every 30 seconds or so keeps the sugar moving without disturbing it in a way that causes it to seize. Third, watch the colour carefully. The caramel should be a deep amber — similar to the colour of runny honey — before the nuts come off the heat. Too pale and the caramel will taste flat and sweet; too dark and it will taste bitter.
Once tipped onto baking paper (parchment paper) and cooled completely, the candied pecans will have set into a solid, glossy cluster. Chop them into pieces just before adding to the salad — some small, some large — for the best textural contrast.

My Top Tips for the Perfect Strawberry & Feta Salad
- Use the best British strawberries you can find — ideally bought from a farm shop, a pick-your-own or a farmers' market during peak season in June and July. The flavour difference between a perfectly ripe British strawberry and an out-of-season import is significant and will be immediately apparent in the finished salad.
- Hull and halve the strawberries rather than slicing them into thin rounds. Halves give a better texture, hold their shape more cleanly on the plate and release less juice into the salad — which keeps the leaves from wilting prematurely.
- Make the candied pecans first and leave them to cool completely before chopping and adding to the salad. Warm candied nuts will melt slightly against the leaves and lose their crunch — they need to be completely cold and set before they go on.
- Stay close to the pan when candying the pecans. The sugar goes from perfectly caramelised to burnt very quickly, and there is very little margin for error in the final 30 seconds. Have your baking paper (parchment paper) ready on the board beside the hob before you start.
- Crumble the feta generously and unevenly. Large irregular pieces of feta distributed across the salad give a much better result than fine crumbles — you want a proper hit of salty, creamy cheese in each forkful rather than a dusty coating across the leaves.
- Dress the salad immediately before serving. The vinaigrette will begin to wilt the rocket (arugula) and draw moisture from the strawberries within minutes of being added — dress at the last possible moment for the freshest result.
- Whisk the vinaigrette vigorously until it emulsifies into a smooth, cohesive dressing. The Dijon mustard acts as an emulsifier — it helps the oil and vinegar combine rather than separating — but it needs a good 30 seconds of whisking to do its job properly.
- Season the vinaigrette carefully. The feta is already salty, so taste the dressing before adding too much salt and adjust accordingly — a lightly seasoned vinaigrette works better here than a heavily salted one.
- If making this for four as a side salad, arrange it on a large sharing platter rather than in a bowl — the colours of this salad are genuinely beautiful and a platter shows them off far better than a deep bowl.

Ingredients and Tools You'll Need
For the Candied Pecans
- 40g pecans – whole pecans give the best result; they caramelise evenly and chop into satisfying irregular pieces once cooled
- 30g caster sugar (superfine sugar) – melts quickly and evenly at medium-high heat; do not substitute with icing sugar (powdered sugar) or brown sugar here
For the Salad
- 60g rocket (arugula) – peppery and slightly bitter, it is the ideal base for a salad this sweet and rich; baby rocket is a little milder if you prefer
- 1 avocado, sliced – use a ripe but firm avocado that holds its shape when sliced; too soft and it will break up when tossed
- 1 punnet of strawberries, hulled and halved – British strawberries at peak season, ideally June or July; see the note above on why British strawberries make all the difference
- 100g feta – crumbled generously in large, irregular pieces; a good quality Greek feta in brine gives the best flavour and texture
For the Dressing
- 1 tsp Dijon mustard – acts as both a flavouring and an emulsifier to bind the dressing together
- 1 tbsp red wine vinegar – sharp and slightly fruity; the right acidity to cut through the richness of the avocado and feta
- 1 tbsp extra virgin olive oil – gives the dressing body and a gentle fruitiness
- Salt – season carefully given the saltiness of the feta
Essential Tools
- 1 small frying pan – for the candied pecans
- Baking paper (parchment paper) and a chopping board – for cooling the pecans

Dietary Variations
Gluten-Free
This salad is naturally gluten-free as written — no adaptations needed.
Vegan
Replace the feta with a good quality vegan feta alternative — several brands now produce one that crumbles well and has a reasonably similar salty, tangy flavour. All other ingredients are naturally vegan.
Different Nuts
Pecans are the first choice here — their buttery richness and slightly sweet flavour caramelises beautifully and complements the strawberries particularly well. Walnuts are the closest substitute and work very well. Hazelnuts or almonds are also good, though they have a firmer texture and may take slightly longer to candy evenly.
Different Leaves
Rocket (arugula) is the recommended choice for its peppery bite, which provides an important contrast to the sweetness of the strawberries and candied pecans. Baby spinach gives a milder, more neutral result if you prefer something less peppery. Watercress is also excellent — it has a similar peppery quality to rocket and works beautifully with strawberries.
Adding Protein
This salad works well as a light main course as it stands, but if you want to add more protein, grilled chicken breast or thigh sliced over the top is an excellent addition. When is British strawberry season?

Can I make the candied pecans in advance?

What can I serve this salad alongside?
As a side salad for four, this works beautifully alongside grilled or barbecued chicken, a simple piece of salmon, grilled halloumi or a cold poached chicken. It is also excellent alongside a simple crusty bread and a glass of something cold as a light lunch for two. The flavours are summery and fresh enough to work alongside almost anything from the grill.
Can I use a different vinegar in the dressing?
Red wine vinegar is the recommended choice — its slight fruitiness works particularly well with strawberries. White wine vinegar is a clean, neutral substitute if that is what you have. Balsamic vinegar is a classic pairing with strawberries and gives a richer, sweeter dressing — use half the quantity as it is more intense. Avoid malt vinegar here, which is too sharp and distinctive for a salad this delicate.
My candied pecans have gone grainy rather than glossy — what went wrong?
Crystallisation — the sugar has seized rather than caramelising smoothly. This usually happens when the sugar is stirred rather than swirled, or when the heat is too low and the sugar takes too long to melt. To avoid it: do not stir, swirl the pan instead; use a medium-high heat from the start; and have the baking paper (parchment paper) ready so you can tip the nuts out the moment they are done. If it happens, the nuts are still edible — they will just have a sandy sugar coating rather than a glossy caramel one.
Ingredients
For the Salad:
40g Pecans
30g Caster Sugar
60g Rocket
1 Avocado, sliced
1 Punnet of Strawberries, hulled and halved
100g Feta
For the Dressing:
1 Tsp Dijon Mustard
1 Tbsp Red Wine Vinegar
1 Tbsp Extra Virgin Olive Oil
Salt

Instructions
- Start by candying your pecans. Place a piece of baking parchment onto a chopping board.
- Add the nuts and sugar to a pan and place over a medium-high heat. Once the sugar has melted, swirl every 30 seconds or so, until the melted sugar has fully coated the pecans, deepened into a caramel colour and the nuts smell toasty. Once candied, tip onto the baking parchment and leave to cool.
- Assemble the salad by placing the rocket on the plate followed by the slices of avocado and halved strawberries. Crumble the feta over the top.
- Once the nuts are cold, chop into pieces and scatter over the salad.
- For the dressing, mix the mustard, vinegar and olive oil together with a pinch of salt. Whisk until combined then pour over the salad and serve!

I have an affinity for crunchy slaws, as I think they provide more interest, more texture and are more filling than many other salads. However, I’m not partial to excessive quantities of mayonnaise. Here I opt for coconut milk instead, which delivers the same creaminess in a less monotonous way. The fresh coriander and bite of roasted peanuts keep this slaw lively and interesting and are perfect with the lightly charred curried chicken skewers. This would also be great sandwiched between a burger bun, or on a soft flatbread.

This is perfect, as far as influencer chefs go, I find this book refreshing in what has become a cohort of lauded influencers who really aren't doing much more than the bog standard meals most people make anyway, or making googled recipes and adding their own "flair". This book is different as it's your normal fare you'd likely make yourself, given a little bit of a twist to speed up the process / use less utensils / ingredients / food waste, in really creative and tasty ways, all perfectly portioned for one.
