I can’t believe it’s taken me 30 years to know that you can make the most delicious, intensely strawberry-flavoured syrup from strawberry tops that would usually go in the bin! By simply mixing equal parts strawberry tops and caster sugar and letting them chill together for a couple of days you get a sweet, fruity syrup that can be used for so many things including this sparkling strawberry iced green tea! Perhaps the most refreshing drink of the summer and one I will be making every year.

Sparkling Strawberry Iced Green Tea

This sparkling strawberry iced green tea is a summer drink that serves four — cold green tea sweetened with homemade strawberry top syrup, topped with sparkling water and finished with slices of lime and fresh strawberry. It is lightly sweet, gently grassy from the green tea, sharp from the lime and deeply, intensely fruity from the syrup — the most refreshing drink of the summer, and one that looks as beautiful in the glass as it tastes. It is made in minutes once the tea has cooled and the syrup is ready, and it is the kind of drink that makes an ordinary afternoon feel like a proper occasion.

Why I Created This Recipe

Once I had discovered the strawberry top syrup — and realised quite how extraordinary it tastes — I needed to find the best possible way to use it. And the answer, it turned out, was this sparkling strawberry iced green tea.

Green tea felt like the right base from the start. Its gentle, slightly grassy flavour is light enough not to compete with the strawberry syrup, and its natural freshness makes it a much more interesting vehicle for a summer drink than plain water or lemonade. The sparkling water adds a liveliness and effervescence that makes the whole thing feel celebratory, the lime brings a sharpness that lifts the sweetness of the syrup, and the result is perhaps the most refreshing drink I have made all summer.

I will be making this every year from now on — and I suspect that once you try it, you will too.

A Note on Green Tea

Green tea is one of the most widely consumed teas in the world — produced primarily in China and Japan, it is made from unoxidised tea leaves, which gives it a lighter, more delicate flavour than black tea. Where black tea is bold, malty and robust, green tea is gentle, slightly grassy and subtly sweet, with a clean finish that makes it a particularly good base for cold drinks.

For an iced tea, green tea is brewed slightly more gently than for a hot drink — four to five minutes in boiling water gives a clean, well-flavoured brew without the bitterness that can develop with longer steeping or hotter water. The tea is then cooled completely before being combined with the other ingredients, which gives a cleaner, fresher flavour than adding ice to hot tea and diluting it immediately.

The light, subtle flavour of green tea is exactly why it works so well here — it provides a backdrop for the strawberry syrup and lime without competing with either.

This drink was made for the strawberry top syrup — the zero-waste recipe that turns discarded strawberry tops into an intensely flavoured fruit syrup. If you have a jar of syrup in the fridge, this is the very best thing to do with it.

Looks as Good as It Tastes

The deep pink of the strawberry syrup swirling through the pale green tea, with slices of lime and fresh strawberry — this is a genuinely beautiful drink that requires almost no effort to put together. It is the kind of thing that looks impressive at a gathering and takes about five minutes to make.

My Top Tips for the Perfect Sparkling Strawberry Iced Green Tea

  • Brew the green tea at the right strength. Four to five minutes in boiling water gives a clean, well-flavoured brew — less than four minutes and the tea flavour will be too weak to come through alongside the syrup; more than five minutes and it can become slightly bitter. Taste it as it brews and remove the bags when it tastes right to you.
  • Let the tea cool completely before assembling the drinks. Pouring warm tea over ice will melt the ice immediately and dilute the drink before it has even been served. Brew the tea ahead of time and refrigerate it until completely cold — this can be done the night before if you are making this for a gathering.
  • Use plenty of ice. This drink is at its best when it is very cold — fill the glasses generously with ice before adding anything else.
  • Add the syrup first, before the tea, so it settles at the bottom of the glass and creates a beautiful gradient effect as you pour the tea over it. You can stir it in before drinking or leave it as a visual feature — either way it looks stunning.
  • Top with sparkling water at the very end, just before serving. Adding it too early will cause it to go flat — pour it in last, gently, to preserve the bubbles.
  • Use two tablespoons of strawberry top syrup per glass as a starting point, but adjust to your own preference. The syrup is intensely flavoured, so a little goes a long way — some people prefer less sweetness, others more. Taste and adjust before serving a large batch.
  • Squeeze a little extra lime juice directly into each glass before serving for an extra hit of sharpness. The lime slices are a beautiful garnish but the juice makes a real flavour difference too.
  • For a more concentrated, more intensely flavoured drink, reduce the sparkling water to 75ml per glass rather than 100ml. For something lighter and more refreshing, increase it to 125ml.

Ingredients and Tools You'll Need

Essential Ingredients

  • 4 green tea bags – a standard supermarket green tea works well; a higher quality loose leaf green tea brewed in an infuser gives a more nuanced flavour if you want to go the extra mile
  • 800ml boiling water – for brewing the tea; use freshly boiled water for the cleanest flavour
  • 8 tbsp strawberry top syrup – from the strawberry top syrup recipe; 2 tablespoons per glass gives a well-balanced sweetness
  • 400ml sparkling water – added last to preserve the bubbles; a good quality sparkling water gives the best result
  • Ice – use generously; this drink needs to be very cold
  • 8 slices of lime – 2 per glass; for garnish and a squeeze of juice
  • Strawberry slices, optional – for garnish; a beautiful visual touch if you have fresh strawberries to hand

Essential Tools

  • Large heatproof jug or bowl — for brewing and cooling the tea
  • 4–6 tall glasses — the taller the better for showing off the gradient effect
  • Spoon — for stirring

Variations

Making It Alcoholic

This drink is an excellent base for a summer cocktail. Add a measure of gin to each glass before the tea for a strawberry gin iced tea that is very hard to improve upon. Vodka works equally well for a cleaner, more neutral result. A splash of Aperol gives a slightly bitter, more complex edge that works beautifully with the strawberry and lime.

Using a Different Tea

Green tea is the recommended choice here — its light, delicate flavour is what allows the strawberry syrup to shine without competition. White tea is an even more delicate alternative with a slightly floral quality that works beautifully. Earl Grey gives a more aromatic, bergamot-scented result that is a little more unusual but very good. Black tea gives a bolder, more traditional iced tea base — use it if you prefer a stronger tea flavour, but be aware that it will be more dominant alongside the syrup.

Using a Different Syrup

The strawberry top syrup is what makes this drink special, but the format works with any fruit syrup. A raspberry or blackberry syrup made by the same cold-process method would be equally beautiful. A good quality elderflower cordial is a more readily available substitute if strawberry tops are not in season.

Making It Still

Simply replace the sparkling water with still water for a non-sparkling version. The drink will be less lively but equally refreshing and just as flavourful.

Frequently Asked Questions

Can I make this drink in advance?

The green tea can be brewed and refrigerated up to 24 hours in advance — it keeps well cold and the flavour actually improves slightly as it chills. Assemble the individual glasses just before serving so the ice does not melt and the sparkling water does not go flat. The syrup will keep in the fridge for up to a week, so there is no urgency to use it all at once.

How sweet is this drink?

Two tablespoons of strawberry top syrup per glass gives a pleasantly sweet but not sugary result — the lime and the green tea both provide a counterbalance that keeps it from feeling cloying. If you prefer a less sweet drink, start with one tablespoon and adjust to taste. If you have a sweet tooth, three tablespoons works well.

Can I use a shop-bought strawberry syrup instead of homemade?

You can, though the homemade strawberry top syrup is notably more fragrant and more intensely flavoured than most commercial alternatives, and it is the thing that makes this drink truly special. If you do use a shop-bought syrup, look for one with a high fruit content and a clean flavour — many commercial strawberry syrups are very sweet and quite artificial in flavour, so taste before using and adjust the quantity accordingly.

Can I make a large batch for a party?

Yes — this recipe scales easily. Simply multiply all the ingredients proportionally, brew a large batch of green tea in advance, and set up a self-serve station with the syrup, ice, sparkling water and garnishes alongside. Guests can assemble their own glasses to their preferred sweetness level, which works beautifully for a garden party or a summer gathering.

4 Green Tea Bags

800ml Boiling Water

8 Tbsp Strawberry Top Syrup

400ml Sparkling Water

Ice

8 Slices of Lime

Strawberry Slices (optional)

Sparkling Strawberry Iced Green Tea

Instructions

  1. Add the boiling water to the green tea bags and brew for 4–5 minutes until your desired strength. Remove the tea bags and leave the tea to cool completely — refrigerate until cold.
  2. When ready to serve, fill four to six tall glasses generously with ice. Add 2 tablespoons of strawberry top syrup to each glass.
  3. Pour 200ml of cold green tea over the syrup in each glass. Top with 100ml of sparkling water, added gently to preserve the bubbles.
  4. Garnish with two slices of lime and a few strawberry slices if using. Serve immediately.

I love the fiery freshness of ginger and it’s the predominant flavour in this rich chicken broth. The finished dish isn’t a soup as such, but there is just enough broth to make every mouthful deliciously juicy. It also takes minimal time to make so it’s a useful recipe to have on hand for days when you’re short of time.

I have an affinity for crunchy slaws, as I think they provide more interest, more texture and are more filling than many other salads. However, I’m not partial to excessive quantities of mayonnaise. Here I opt for coconut milk instead, which delivers the same creaminess in a less monotonous way. The fresh coriander and bite of roasted peanuts keep this slaw lively and interesting and are perfect with the lightly charred curried chicken skewers. This would also be great sandwiched between a burger bun, or on a soft flatbread.

This is perfect, as far as influencer chefs go, I find this book refreshing in what has become a cohort of lauded influencers who really aren't doing much more than the bog standard meals most people make anyway, or making googled recipes and adding their own "flair".
